Same-Day Focaccia

Directions

  1. 1Whisk together warm water, oil, honey, and yeast.
  2. 2Stir in bread flour and salt.
  3. 3Cover and rest at room temperature for 15 minutes.
  4. 4Stretch and fold the dough about 8 times around the bowl.
  5. 5Cover and rest at room temperature for 15 minutes.
  6. 6Repeat the stretch and folds once more, cover, and proof at room temperature for 1-1.5 hours.
  7. 7Drizzle oil on a 9x13 metal baking tray.
  8. 8Place parchment paper on the tray and coat the paper with oil.
  9. 9Transfer the dough to the tray and fold the dough hot dog style, half way to the center and the other half overlapping.
  10. 10Cover and proof at room temperature for 1-1.5 hours.
  11. 11In a bowl, mix 1 tablespoon oregano, 1 tablespoon parsley, 1/2 teaspoon red pepper flakes, 1/2 teaspoon garlic powder, and 1/4 cup grated Parmesan.
  12. 12In a separate bowl, shred about 1 cup of Colby jack cheese and 1/4 cup of Parmesan cheese.
  13. 13Sprinkle 3/4 of the herb mixture on top of the dough and dimple with fingers.
  14. 14Oil a knife or bread cutter and cut the dough into four sections.
  15. 15Add cheese to the top and the rest of the herb mixture.
  16. 16Bake for 18-20 minutes.
  17. 17Cool on a rack for 10 minutes.

  • 10 g fine sea salt

Tips

  • Don't skimp on herbs and cheese; when you think you've added too much, add more.
