Prepare the spice rub with fresh rosemary, thyme, minced garlic, garlic powder, onion powder, paprika, lemon zest, brown sugar, salt, and black pepper. Chop fresh garlic.
Mix all spice rub ingredients together.
Pat chicken thighs dry. Pour olive oil on chicken thighs and add fresh lemon on both sides.
Work the spice rub into the chicken thighs, ensuring it gets everywhere, including under the skin.
Heat a skillet with butter and olive oil.
Sear the chicken thighs for about 4 minutes on each side until a nice crust forms.
Transfer the seared chicken thighs to a dish that can be put in the oven.
Prepare the sauce by adding rosemary, thyme, whole garlic cloves, yellow onions, lemon skin, 3 tablespoons of butter, a cube of chicken bouillon, and water to the skillet.
Reduce the sauce until it thickens.
Pour the sauce over the chicken thighs.
Bake in the oven at 425°F (220°C) for about an hour, basting periodically. Cover and then uncover the chicken during baking.
