Pani Popo or Samoan Coconut Buns

Directions

  1. 1Combine warm milk, sugar, and yeast; let it bloom for about 5 minutes.
  2. 2Add self-raising flour to a bowl.
  3. 3Add melted butter, and the milk and yeast mixture to the bowl.
  4. 4Stir until just combined.
  5. 5Knead for 3 to 5 minutes.
  6. 6Shape the dough into a ball and proof it for about 1 to 1.5 hours.
  7. 7Punch the air out.
  8. 8Portion the dough out to about 32 balls.
  9. 9Fold it back in on itself.
  10. 10Cup your hand and roll the balls.
  11. 11Evenly space them out in the tray.
  12. 12Cover with a tea towel and proof for at least 30 minutes.
  13. 13Combine coconut milk, coconut cream, and condensed milk.
  14. 14Pour about half of the mixture over the buns.
  15. 15Depending on your oven, bake at 170 to 180 degrees Celsius.
  16. 16Bake for 30 minutes.
  17. 17At the 20-minute mark, pour another quarter of the sauce over the buns.
  18. 18Bake for another 10 minutes.
  19. 19Sprinkle some desiccated coconut.
  20. 20Optional: add some lime zest.

  • 1 packet yeast
  • 800 grams self-raising flour
  • 100 grams melted butter
  • 400 mls coconut milk
  • 400 mls coconut cream
  • 400 mls condensed milk
  • sugar
  • desiccated coconut
  • lime zest
