1In a heavy bottom saucepan melt six tablespoons of butter.
2Add one pound of macaroni to salted water and cook until al dente.
3Add half a cup of all-purpose flour to the melted butter and stir.
4Add five and a half cups of milk and whisk until smooth; make sure that flour doesn't stick to the bottom.
5Add one teaspoon of salt, a quarter of a teaspoon of black pepper, a quarter of a teaspoon of cayenne pepper and a quarter teaspoon of freshly grated nutmeg.
6Add three cups of cheddar and one and a half cups of gruyere cheese to the sauce and stir.
7Pour the macaroni and cheese mixture into a greased baking pan.
8Tear up some white bread and pour some melted butter over it.
9Top macaroni and cheese with the buttered bread crumbs.
