Pan Fried Steaks

Directions

  1. 1Give the chuck eye a touch of oil and a generous seasoning.
  2. 2Add neutral oil to a smoking hot pan.
  3. 3Place the steak in the pan away from you.
  4. 4After a minute, move the steak to another side of the pan, get eye level to give it a peak.
  5. 5Cook for about 2 minutes per side.
  6. 6Remove the steak from the pan to rest.
  7. 7Drop some shallot and crushed garlic into the pan.
  8. 8Turn the heat all the way down to low and add a little knob of butter.
  9. 9Base the steak and flip every 30 seconds.
  10. 10In the last minute of basing add some thyme.
  11. 11Don't pile your shallots and garlic on top of the steak, they'll steam and you'll lose your crust.
  12. 12After a minute of basing, pull it out to rest.
  13. 13Rest for about half the time you spent cooking it.
