Directions

Give the chuck eye a touch of oil and a generous seasoning.

Add neutral oil to a smoking hot pan.

Place the steak in the pan away from you.

After a minute, move the steak to another side of the pan, get eye level to give it a peak.

Cook for about 2 minutes per side.

Remove the steak from the pan to rest.

Drop some shallot and crushed garlic into the pan.

Turn the heat all the way down to low and add a little knob of butter.

Base the steak and flip every 30 seconds.

In the last minute of basing add some thyme.

Don't pile your shallots and garlic on top of the steak, they'll steam and you'll lose your crust.

After a minute of basing, pull it out to rest.

Rest for about half the time you spent cooking it.

Tips
