Directions

  1. 1Thinly slice the potato using a mandolin slicer or by hand.
  2. 2Combine cornstarch, flour, water, and a pinch of salt in a bowl and mix well.
  3. 3Add the potato slices to the batter and coat them thoroughly.
  4. 4Pan-fry the potato slices in a single layer on a heated oiled pan over high heat until golden brown on both sides.
  5. 5Combine soy sauce, vinegar, and a little gochugaru in a small bowl to make a dipping sauce.

Ingredients

  • 1 whole potato
  • 2 tbsp cornstarch
  • 4 tbsp flour
  • 1/2 cup water
  • salt (optional)
  • soy sauce
  • vinegar
  • gochugaru (optional)

Equipment

mandolin slicercutting boardbowlwhiskfrying panchopsticks

Tips

  • Hand-cutting the potato may result in thicker, 'chonky' pieces, which some people prefer.
  • This recipe requires patience for pan-frying to achieve the right crispy-chewy texture.
