Wash the red split lentils until the water runs mostly clear.

Add the lentils to a pot, submerge with water, and boil until they soften.

While lentils cook, squeeze lemons, crush garlic with 1 tsp of salt, and cut pumpkin into cubes.

Once lentils are softened, add remaining salt, turmeric, pumpkin, and crushed garlic.

Cook for 15 more minutes, or until pumpkin is tender; add water if the soup gets too thick.

Stir occasionally and add lemon juice and salt to taste once pumpkin is almost tender.

Turn off heat, add olive oil, and mix.

Serve with garnishes (lemon juice, Aleppo pepper, olive oil, dry stale bread).

0.25 cup olive oil
