1Peel and cut the potatoes into smaller pieces, then boil them in water.

4Prepare the cowboy butter: Melt butter in a pan on low heat. Add paprika, cayenne, chilli flakes, crushed garlic, Dijon mustard, chives, parsley, lemon zest and juice, salt, and pepper. Whisk until well combined. Remove from heat and set aside.
5Sear the steak on all sides in a pan.
6Mash the boiled potatoes with roasted garlic cloves, butter, and cream until smooth.
7Plate the mashed potatoes, top with the caramelized onions, then place the seared steaks on top.
8Drizzle the cowboy butter sauce over the dish and serve.
