Add 2 tablespoons of olive oil to a pan.

Add 1 onion, 1 large tomato, and 4-5 pods of garlic to the pan.

Add 1/3 bottle gourd (lauki) and 100g pumpkin to the pan.

Add 1/2 teaspoon of salt to the vegetables.

Mix the vegetables well.

Cover and cook on low-medium flame for 15 minutes, stirring occasionally.

Meanwhile, boil 1.5 cups or 150 grams of pasta of your choice in a pot of water.

Strain the boiled pasta, reserving some pasta water, and let the cooked vegetables cool down.

Transfer the cooked vegetables to a blender.

Add 50-60 grams of paneer (optional) to the blender.

Add 1/3 cup of pasta water to the blender.

Blend everything until a smooth, creamy paste is formed.

Pour the creamy paste back into the pan.

Add oregano, chili flakes, and salt to taste to the paste.

Mix well.

Add more pasta water for desired consistency if needed.

Add the boiled pasta and olives (if you have them) to the sauce.

Mix it well and cook for 2 minutes.

Serve the pasta and garnish with fresh herbs.
