Preheat your oven to 475°F (246°C).

Cut two heads of broccoli into florets, holding them over a bowl to catch the pieces.

Drizzle 2 to 3 tablespoons of olive oil over the broccoli.

Toss the broccoli until all florets are coated in oil.

Add a good pinch of salt to the broccoli.

Add a good amount of black pepper to the broccoli.

Toss the broccoli again to distribute the seasonings.

Line a baking pan with foil.

Pour the seasoned broccoli onto the pan.

Spread the broccoli florets out on the pan to prevent steaming and encourage charring.

Place the pan in the oven on the middle rack for 15 to 20 minutes, or until well charred.

While the broccoli is roasting, prepare the Caesar dressing by adding 2 tablespoons of mayonnaise to a bowl.
