Serves 1

Directions

  1. 1Finely chop the red onion and pinch it to separate its layers.
  2. 2Add the chopped red onion to a bowl with cold water and let it sit for 10 minutes to make it less sharp.
  3. 3In the meantime, cut the tomatoes into bite-sized pieces and add them to a bowl.
  4. 4Cut the cucumber in half lengthwise, remove some of the seeds if there are too many, then cut it into small dice and add it to the bowl with the tomatoes.
  5. 5Cut the avocado in half, remove the pit, cut it into dice, scoop it out, and add it to the bowl.
  6. 6Take the red onion out of the water, drain it, and add it to the bowl.
  7. 7Add finely chopped parsley to the bowl.
  8. 8Season with good quality extra virgin olive oil, freshly squeezed lemon juice, salt, and black pepper.
  9. 9Mix gently until the vegetables are coated in the condiments.
  10. 10Taste and adjust for salt before serving on a platter.
  11. 11For leftovers, make some pita chips in the air fryer and add them to the salad.
  12. 12Add some chickpeas to the salad with pita chips.
  13. 13Give it a quick toss.
  14. 14Add your favorite cheese on top, such as feta cheese.
