3Heat a skillet on low-medium heat and add a little olive oil and some butter.
4Lightly dredge the chicken breasts in the seasoned flour on both sides, ensuring both sides are coated.
5Place the chicken into the skillet and cook for about 5 minutes on each side.
6Reserve a tablespoon of the used flour and discard the rest.
7To make the sauce, combine one cup of chicken broth, one tablespoon of the reserved flour, one tablespoon of Dijon mustard, and half a lemon; set aside.
8After about 10 minutes total cooking time for the chicken, remove it from the skillet and set it aside.
9Deglaze the pan with the prepared sauce, scraping all the bits off the bottom.
10Let the sauce simmer for a couple of minutes until it starts to thicken.
11Once the sauce thickens, add the chicken back into the skillet.
12Place one slice of ham on each chicken breast.
13Place one slice of provolone on top of each piece of ham.
