Directions

  1. 1Start by combining cold butter, sugar, vanilla, salt, and freshly chopped rosemary in a bowl.
  2. 2Mash the ingredients together until the butter softens slightly.
  3. 3Mix in flour by hand until you get buttery crumbs that press into a dough.
  4. 4Shape the dough into a rectangle about 1/2 inch thick.
  5. 5Cover the dough with plastic wrap and roll it to a 1/4 inch square.
  6. 6Square off the edges of the dough.
  7. 7Cut the dough into strips, then into rectangles.
  8. 8Place the cookies on a lined baking sheet.
  9. 9Sprinkle sugar on top of each cookie.
  10. 10Poke each cookie four times with a fork for even baking.
  11. 11Bake the cookies at 300 degrees Fahrenheit for about 50 minutes until golden on top and browned underneath.
  12. 12Cool the cookies briefly on the pan, then fully on a cooling rack.
