6Add salt to a pot of boiling water.
7Add the spaghetti to the boiling water, letting it soften and submerge.
8Take less than half of the fried zucchini and place it into a food processor.
9Add a handful of fresh mint leaves to the food processor.
10Add a sliced garlic clove to the food processor (optional).
11Purée the zucchini, mint, and garlic until creamy.
12Add the reserved juice from the fried zucchini to the food processor and blend again.
13Add grated cheese to the food processor and blend until well combined.
14Pour the zucchini cream into a serving dish.
15Using a slotted spoon, transfer the cooked pasta directly from the pot to the serving dish with the zucchini cream, allowing some pasta water to come with it.
16Mix the spaghetti thoroughly with the zucchini cream.
17Plate the pasta and top with the remaining fried zucchini.
18Garnish with more grated cheese.
