Directions
- 1Cut the limes from pole to pole and juice them to get ¾ cups of juice.
- 2In a saucepan, combine 1 cup of water and 1 cup of sugar, stir until the sugar dissolves.
- 3Remove from heat and add 3 envelopes of unflavored gelatin, stir until it dissolves.
- 4Add ¾ cup of fresh lime juice and 2 stems of fresh mint. Steep for 12-15 minutes.
- 5Remove mint stems and stir in 1 cup of white rum.
- 6Fill each lime shell with the mojito mixture and place them in a cupcake tin.
- 7Refrigerate for at least 3 hours until set.
- 8Cut the limes in half and sprinkle with chopped fresh mint.
