Serves 1

Directions

  1. 1Flatten the sandwich bread as much as possible with a rolling pin.
  2. 2Make circles with a pasta cup and place them on an upside-down muffin mold.
  3. 3Roast the bread circles in the oven for a few minutes until dry and crispy.
  4. 4Remove the internal bone from the avocado and cut it into cubes.
  5. 5To make guacamole cream, put the avocado cubes, lemon juice, lemon peel, a few slices of onion, 4-5 dates, a chili pepper, salt, and oil in a minipimer glass.
  6. 6Blend everything at maximum speed until a smooth and homogeneous cream is obtained.
  7. 7Transfer the guacamole mixture into a pastry bag.
  8. 8Cut a piece of salmon suitable for raw consumption into very small and regular cubes to make tartar.
  9. 9Transfer the salmon tartar to a bowl and season lightly only with a little salt and a drizzle of oil.
  10. 10Add a little guacamole cream to the base of the dish to prevent the tacos from slipping.
  11. 11Stuff the bread tacos with more guacamole cream.
  12. 12Gently insert the salmon tartar into the tacos.
  13. 13Add a few more spikes of cream, 2 small pieces of date, and 2 small leaves of dill to finish the dish.
