Smoky Nigerian Jollof

Directions

  1. 1Dehydrate your pepper mixture to build flavor and give the jollof rice a richer taste.
  2. 2Fry onions and tomato paste in vegetable oil until well fried.
  3. 3Add the blended pepper mixture and stir well.
  4. 4Season with seasoning cubes and salt.
  5. 5Pour in meat stock and a little water, depending on the amount of rice.
  6. 6Add curry masala, jollof rice seasoning powder, and some bay leaf.
  7. 7Cover the pot and allow it to boil so all the flavors can come together.
  8. 8Once it is bubbling, add the thoroughly washed rice.
  9. 9Give it a good stir and cover it again.
  10. 10Let it cook slowly on a very low heat until the rice absorbs all the goodness.
  11. 11After about 15 minutes, open the pot and give it a good stir.
  12. 12Cover it again for it to steam together.
