Dehydrate your pepper mixture to build flavor and give the jollof rice a richer taste.

Fry onions and tomato paste in vegetable oil until well fried.

Add the blended pepper mixture and stir well.

Season with seasoning cubes and salt.

Pour in meat stock and a little water, depending on the amount of rice.

Add curry masala, jollof rice seasoning powder, and some bay leaf.

Cover the pot and allow it to boil so all the flavors can come together.

Once it is bubbling, add the thoroughly washed rice.

Give it a good stir and cover it again.

Let it cook slowly on a very low heat until the rice absorbs all the goodness.

After about 15 minutes, open the pot and give it a good stir.

Cover it again for it to steam together.
