Directions

  1. 1To make the marinade, combine some white onions, a bunch of garlic cloves, a handful of cilantro, one can of chipotle peppers (or two if you like it extra spicy), some fresh lime juice, and orange juice.
  2. 2Season everything with chili powder, cumin, oregano, black pepper, and honey (optional). Blend everything together.
  3. 3Take out 40 ounces of lean steak, poke some holes in it, then put the steak in a bag with the marinade and let it sit for at least 30 minutes (overnight recommended).
  4. 4When the steak is done marinating, cook it on high heat, let it rest for a few minutes and then dice it into small pieces.
  5. 5Assemble with a low-calorie tortilla, some fat-free mozzarella, carne asada, diced onions, and cilantro.
  6. 6Toast the quesadillas until they are golden brown on both sides. Wrap them in aluminum foil and store them in the freezer for up to three months if meal prepping.
