4Remove the broth from heat, add lemon zest and 1–1 1/2 tbsp of juice, then whisk in 3 tbsp of cold salted butter until the broth is silky.
5Assemble the bowls with cooked jasmine rice, crispy beef, pickled carrots, and a fried egg, then pour the broth around the rice and garnish with scallions, cilantro, and sesame seeds.
