1
Cut eggs in half and get the yolks out.
2
Finely dice three dill pickle spears and a jalapeño.
3
Add the diced jalapeño and dill pickle pieces to the yolks.
4
Add about one tablespoon of Dano's Cajun seasoning.
5
Add a couple tablespoons of Creole injection butter.
6
Add about one and a half tablespoons of yellow mustard.
7
Add about two tablespoons of mayonnaise.
8
Mash all the yolks and blend all ingredients together for the filling.
9
Prepare the breading station with flour, egg wash (eggs), and panko breadcrumbs mixed with more Cajun seasoning.
10
Drop the egg halves into the flour and coat them, shaking off excess.
11
Fully coat the floured eggs in the egg wash, patting into any holes.
12
Bread the eggs in the panko breadcrumbs.
13
Heat oil to 325 degrees Fahrenheit for frying.
14
Carefully lay the breaded eggs into the hot oil and fry for about one minute on each side until crispy.
15
Remove fried eggs and lay them with the whole side down.
16
Fill the fried egg halves with the yolk mix, shaping it with a spoon or scooping it in.
17
Sprinkle more seasoning on top of the filled deviled eggs.
