Marry Me Chicken Bites

Directions

  1. 1Cube the chicken breasts into large bite-sized pieces, pat them dry, and toss with olive oil, sun-dried tomato oil, and seasonings (paprika, garlic powder, seasoning salt, Italian seasoning, black pepper).
  2. 2Heat neutral oil in a large skillet over medium-high heat. Once hot, add the chicken cubes and cook for about 3-5 minutes per side until golden and sizzling.
  3. 3Reduce heat to medium-low, toss in butter and minced garlic, and gently sauté for 2-3 minutes until fragrant. Then remove the chicken from the pan.
  4. 4Still using the same pan, deglaze with white cooking wine (optional), scraping up the goodness stuck to the bottom.
  5. 5Add the minced shallot, chopped sun-dried tomatoes, and 1 more tablespoon of the sun-dried tomato oil, then caramelize for 3-4 minutes, stirring often.
  6. 6Slowly pour in the heavy cream. Stir and bring to a light simmer. Add the fresh parmesan and reduce heat to low, letting it thicken for 4-5 minutes.
  7. 7Boil 3 pounds of russet potatoes or Yukon gold potatoes in water.
  8. 8Melt 1/4 cup of salted butter and add 5 garlic cloves and 3/4 cup of milk or cream.
  9. 9Add the boiled potatoes to the melted butter and cream mixture, then mash them. Season with salt and pepper to taste.
  10. 10Lay down a generous bed of warm mashed potatoes. Place your chicken bites on top and ladle the marry me sauce right over them. Finish with a sprinkle of fresh parsley if desired.
