Directions

  1. 1Tear bread into cubes and toss with butter. Set aside.
  2. 2Cook macaroni until al dente (2-3 minutes less than package directions). Rinse under cold water and drain.
  3. 3In a saucepan, melt butter, add flour, and whisk until smooth.
  4. 4Slowly whisk in warm milk until thick. Remove from heat.
  5. 5Stir in salt, nutmeg, pepper, cayenne pepper, 3 cups cheddar cheese, and 1 1/2 cups Gruyere cheese.
  6. 6Add macaroni to cheese sauce.
  7. 7Pour into a greased 9x13 inch baking dish.
  8. 8Sprinkle the top with remaining cheddar, Gruyere, and Parmesan or Pecorino cheese.
  9. 9Top with buttered bread crumbs.
  10. 10Bake at 375°F for 30-40 minutes, until golden brown and gooey.

  • 0.5 cup all-purpose flour

  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 4.5 cups grated sharp white cheddar cheese
  • 2 cups grated Gruyere cheese
  • 1 pound elbow macaroni
  • 0 parmesan or pecorino
