Lemony Cajun Chicken Orzo Skillet

Directions

  1. 1Season chicken thighs with Cajun seasoning and toss to coat thoroughly.
  2. 2Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through.
  3. 3Remove chicken from the skillet and set aside.
  4. 4In the same skillet, add the orzo and sauté for 1 minute.
  5. 5Pour in the chicken broth, bring to a simmer, and cook until the liquid is mostly absorbed.
  6. 6Stir in Greek yogurt, parmesan cheese, minced garlic, and lemon juice until combined and creamy.
  7. 7Fold in the fresh spinach and cook until wilted.
  8. 8Return the cooked chicken to the pan and top with fresh dill.
