Chicken Pot Pie Tater Tot Casserole

Directions

  1. 1Add 1/3 cup of butter to a hot pan.
  2. 2Add 1/3 cup of diced onions.
  3. 3Sauté the onions in butter until they get tender and a little bit of color.
  4. 4Add 1/3 cup of flour and stir it in.
  5. 5Add 1/2 teaspoon of salt, a 1/4 teaspoon of black pepper, 1/2 a cup of whole milk, and about 1 and 3/4 cups of chicken broth while stirring.
  6. 6Add 1 teaspoon of minced garlic (if not added earlier) and 1 teaspoon of garlic powder.
  7. 7Stir and cook until the mixture gets smooth and thick.
  8. 8Add 2 1/2 cups of shredded cooked chicken thighs.
  9. 9Add 2 cups of mixed vegetables.
  10. 10Turn off the heat and stir until everything is combined and heated throughout.
  11. 11Pour the mixture into a 9x9 baking dish.
  12. 12Arrange a bag of tater tots on top.
  13. 13Add some fresh shredded cheddar cheese on top.
  14. 14Bake the casserole in the oven at 425 degrees Fahrenheit (218 degrees Celsius) for about 30 minutes until it's golden brown.
  15. 15Let it cool for about 5 minutes.
  16. 16Sprinkle parsley on top (optional).
  17. 17Serve in a bowl and add your favorite hot sauce if desired.
