Honey Glazed Salmon Bowls

Directions

  1. 1Cut the salmon into bite sized pieces.
  2. 2Coat the salmon in avocado oil, honey, sriracha and soy sauce.
  3. 3Transfer to a parchment-lined baking sheet.
  4. 4Bake for 10-11 minutes, then broil for 1-2 minutes to get that crunchy top.
  5. 5Remove from the oven and set aside.
  6. 6Make the spicy sauce by adding cottage cheese, sriracha, cumin, onion powder, paprika and honey to a blender.
  7. 7Blend until completely smooth, then taste and adjust seasonings as needed.
  8. 8Make the cucumber avocado salad by adding diced cucumbers, diced avocado, cilantro, lime juice and honey in a bowl.
  9. 9Toss well.
  10. 10Add rice to a bowl first, followed by the salmon bites.
  11. 11Add the cucumber avocado salad, and a drizzle of the delicious spicy sauce on top.

  • 1.5 pounds salmon
  • 2 tb avocado oil
  • 2 tb honey
  • 3 tb sriracha
  • 0.25 cup low sodium soy sauce
  • 2 cups cooked rice
  • 2 persian cucumbers
  • 1 avocado
  • 0.25 cup cilantro
  • 1 lime
  • 1 tb honey
  • 1 cup cottage cheese
  • 1 lime
  • 0.25 cup sriracha
  • 2 tsp cumin
  • 0.5 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tb honey

Tips

  • Coat the salmon in the avocado oil, honey, sriracha and soy sauce.
  • Transfer to a parchment-lined baking sheet.
  • Bake 10-11 minutes, then broil for 1-2 minutes at the end to get that crunchy top.
  • Cook rice according to package instructions and set aside.
  • Make the spicy sauce by adding everything to a blender and blending until completely smooth. Taste and adjust seasonings as needed.
  • Add all ingredients to a bowl and toss well.
  • Add rice first, followed by the salmon bites, then the cucumber-avocado salad, and last, a drizzle of the delicious spicy sauce on top.
