Directions

Add boneless skinless chicken thighs to the slow cooker.

Add Thai red curry paste to the slow cooker.

Add garlic and ginger paste to the slow cooker.

Add brown sugar and soy sauce to the slow cooker.

Pour light coconut milk into the slow cooker.

Mix all the ingredients well.

Cover and cook on low for 4-6 hours until the chicken is fall-apart tender.

Shred the chicken directly in the slow cooker using two forks.

Add Thai basil, cilantro, and the juice and zest of 2-3 limes to the slow cooker.

Mix everything to combine.

Add steamed white jasmine rice to the slow cooker.

Mix the rice with the chicken and sauce until well combined.

Portion the mixture into six equal servings.

Garnish each serving with a lime wedge.

420 g jasmine rice
