Toss chicken in a bowl with Greek yogurt, lots of spices, lemon and olive oil.

Marinate chicken overnight for the best flavor, or for at least 1 hour.

Thread chicken onto skewers.

Pop them on the grill for that smoky char, cooking 4-5 minutes per side until charred and cooked through (internal temp: 165°).

Brush them with that tangy herb oil while the skewers are still hot.

Serve it over a cauliflower tabbouleh.

2 lbs boneless, skinless chicken thighs, cut into skewer-sized chunks
0.66 cup Greek yogurt (full-fat preferred)
1 whole lemon zest & juice
4 cloves garlic, grated or finely minced
1.5 tsp ground cumin
1.5 tsp smoked paprika
1.5 tsp dried oregano
1.5 tsp Aleppo pepper
1.5 tsp kosher salt
0.5 tsp black pepper
1.5 tbsp honey
2 tbsp extra virgin olive oil
1 cup Tangy Herb Oil
