Smoky Chicken Skewers with Garlic Yogurt Marinade & Tangy Herb Oil

Directions

  1. 1Toss chicken in a bowl with Greek yogurt, lots of spices, lemon and olive oil.
  2. 2Marinate chicken overnight for the best flavor, or for at least 1 hour.
  3. 3Thread chicken onto skewers.
  4. 4Pop them on the grill for that smoky char, cooking 4-5 minutes per side until charred and cooked through (internal temp: 165°).
  5. 5Brush them with that tangy herb oil while the skewers are still hot.
  6. 6Serve it over a cauliflower tabbouleh.

  • 2 lbs boneless, skinless chicken thighs, cut into skewer-sized chunks
  • 0.66 cup Greek yogurt (full-fat preferred)
  • 1 whole lemon zest & juice
  • 4 cloves garlic, grated or finely minced
  • 1.5 tsp ground cumin
  • 1.5 tsp smoked paprika
  • 1.5 tsp dried oregano
  • 1.5 tsp Aleppo pepper
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 1.5 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 cup Tangy Herb Oil
