Toss the apples with honey, cinnamon, vanilla, and walnuts in a large bowl.
Mash butter or margarine, flour, brown sugar, and cinnamon in a bowl with a fork until it becomes a crumbly texture. This is for the crumble topping.
Preheat your oven to 325°F (160°C).
Combine all the cake ingredients (flour, sugar, neutral oil, eggs, orange juice, baking powder, vanilla extract, and salt) in a stand mixer bowl and whisk on low for 1 minute.
Turn the mixer to medium speed and whisk for 6-7 minutes to aerate the batter.
Pour about half of the batter into a fluted tube pan.
Assemble half of the spiced apple slices all around the batter.
Pour the remaining batter on top of the apples.
Decorate the top with more apple slices.
Sprinkle the crumble topping over the cake.
Place the cake in the middle of the middle rack in the preheated oven.
Bake for 1 hour and 10-15 minutes, or until golden brown and a toothpick inserted comes out clean.
Let the cake cool on a wire rack without demolding.
Once cool enough to touch, remove the outer part of the cake pan and let it cool completely on the rack.
Once completely cold, remove the inner piece of the pan.
