Directions

  1. 1Make your favorite pot roast until the meat is spoon tender.
  2. 2Remove the meat from the pot.
  3. 3Discard the big chunks of carrot from the pot roast.
  4. 4Drain the juice from the pot, making sure to separate the fat.
  5. 5Shred the meat.
  6. 6Add some butter to the same pot.
  7. 7Add a mirepoix (carrots, onions, and celery) to the pot and cook until soft.
  8. 8Add some garlic and cook until fragrant.
  9. 9Bring the reserved liquid (juice) back to the pot and reduce it down.
  10. 10Once the liquid is reduced, taste and adjust for salt if needed.
  11. 11Stir in the shredded meat until it is nice and covered.
  12. 12Return the mixture to your favorite oven-safe casserole dish.
  13. 13Top the mixture with your favorite mashed potatoes.
  14. 14Add a little cheese to the mashed potatoes if desired.
  15. 15Take a fork and lightly drag it across the potatoes in your chosen pattern to create crispy bits.

Tips

  • Do not chop down big chunks of carrot in the pot roast as they will be discarded.
  • Make sure to separate the fat when draining the juice from the pot roast.
