1Boil your noodles until al dente and reserve some of the water.
2Rinse the noodles briefly and set aside.
3Take another pot of water and season with salt before poaching your chicken for 10 minutes and cooling.
4Once your chicken is cooled, shred it finely and set to the side.
5For the sauce, combine peanut butter, dark soy sauce, light soy sauce, sesame oil, garlic, ginger, vinegar, honey, and your noodle water and mix thoroughly.
6Next, combine your noodles, chicken, and sauce and toss very well before placing it all in a bowl.
7Place into meal prep bowls.
8You can optionally garnish with sesame seeds, chili flakes, and scallions.
