Scotch bonnet and pimento maple glazed Ham

Directions

  1. 1Wash your ham to remove the extra brine from the packaging.
  2. 2In a pan, create a bed of fresh thyme, pimento, and cloves for extra aroma.
  3. 3Pour fresh orange juice into the pan with the herbs and spices to add citrus, brightness, and keep the ham moist.
  4. 4Cover the ham and bake it at 350 degrees Fahrenheit for 2 hours.
  5. 5To make the glaze, add cloves, pimento seeds, Scotch bonnet or habanero to a blender.
  6. 6Add pineapple juice to the blender for balance.
  7. 7Add brown sugar and maple syrup to the blender for a sticky sensation.
  8. 8Blend all the glaze ingredients together.
  9. 9Pour the blended glaze into a pot on low-medium heat to reduce and create a rich glaze.
  10. 10After 2 hours, remove the ham from the oven.
  11. 11Make diagonal cuts on both sides of the ham and add some cloves into the cuts.
  12. 12Add some of the glaze to the ham so the flavors can penetrate.
  13. 13Place the ham back in the oven for another 10 minutes.
  14. 14After 10 minutes, take the ham out of the oven.
  15. 15Add pineapples and cherries to the ham for final garnish and presentation.
  16. 16Put the ham back into the oven for an additional 10 minutes.
  17. 17Pour all the juices created by the ham back over it.
