Directions

Cut the beef, across the grain, into very thin bite-sized pieces.

Place the beef in a bowl and add corn starch, bi-carb, white pepper, 1 tbsp rice wine, light soy sauce, and 2 tsp of the oil.

Mix well and let it sit for 5 minutes.

Separate the fresh ho-fun noodles.

Mix the oyster sauce, dark soy sauce, and the remaining 1 tbsp of rice wine together in a separate bowl.

Thinly slice half an onion.

Roughly chop the Chinese chives.

Heat the oil in a wok over high heat.

Add the beef to the wok and stir-fry for 2-3 minutes until just cooked through and a little golden.

Remove the beef from the wok and set it aside on a plate.

Reheat the wok over high heat, adding more oil if needed.

Add the sliced onion and stir-fry for 1-2 minutes until slightly charred.

Add the Chinese chives and stir-fry for a minute to soften.

Add the noodles, bean sprouts, and sauce to the wok.

Stir-fry for 3-4 minutes until the noodles are tender.

Return the beef to the pan and stir-fry everything together.

Check the seasoning and add more soy sauce to taste.

Serve immediately.

250 g Beef topside or skirt/hanger steak, very thinly sliced
1 tsp Corn starch
0.25 tsp Bicarbonate of soda
0.25 tsp White pepper
2 tbsp Rice wine
2 tsp Light soy sauce
3 tbsp Neutral oil
400 g Fresh ho-fun noodles, separated
2 tbsp Oyster sauce
1.5 tbsp Dark soy
0.5 Onion, thinly sliced
1 handful Roughly chopped Chinese chives
150 g Bean sprouts
