1Marinate thin slices of flank steak with 1 tablespoon of soy sauce, 1 teaspoon of oil, 1/8 teaspoon of baking soda, 1 tablespoon of Shaoxing wine, 1 egg white, and 1 teaspoon of cornstarch. Let it sit for 30 minutes.
2Make the sauce by combining 2 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of water, 1 tablespoon of sugar, and a dash of white pepper. Mix well.
3Cook rice noodles to your desired texture, then strain and rinse under cold water. Set aside.
4Heat a wok until it smokes, add a few tablespoons of oil, and heat until it smokes.
5Add the marinated beef to the wok and sauté until it is about halfway cooked.
6Add 1 tablespoon of minced ginger and 1 tablespoon of minced garlic. Sauté for a minute.
7Add broccoli, sauté together, cover, and steam for a few minutes.
8Add cooked rice noodles and pour over the sauce.
9Toss in some green onions and sauté together until the noodles soak up the sauce and everything is coated in the umami sauce.
