Start by preparing a shot of espresso.

Slice the Swiss Brown mushrooms.

Chop the garlic cloves.

Chop the chives.

Slice two thick pieces of sourdough bread.

Toast the sourdough slices.

Heat 1 tbsp of olive oil and butter in a large frying pan over medium-high heat.

Add the sliced mushrooms to the pan and cook, stirring occasionally, for 5 minutes, until they start to brown.

Season the mushrooms with salt and pepper.

Add the chopped garlic to the pan and cook for another minute, stirring.

Pour in the espresso coffee and bring it to a boil, cooking until it reduces by half.

Add the cream to the pan and cook for another 2 minutes until the sauce thickens slightly.

Heat the remaining olive oil in a frying pan over medium heat and fry the eggs for 2-3 minutes until the whites are set.

Serve the braised mushrooms on the buttered toast.

Sprinkle with chopped chives.

Top with a fried egg.

Grate parmesan cheese over the top.

2 thick slices sour dough, toasted
2 tbsp grated parmesan cheese
