Directions
1
Add 2 cups of warm water, 2.5 tablespoons of dry active yeast, and 1 tablespoon of sugar to an electric mixing bowl.
2
Whisk the mixture thoroughly and let it sit on the counter for about 3 minutes to activate the yeast.
3
Add 5 cups of all-purpose flour, half a cup of melted butter, and a teaspoon of salt to the activated yeast mixture.
4
Mix with an electric mixer for about 3 minutes until a nice soft dough ball forms.
5
Divide the dough into 10 equal pieces, each weighing between 140 to 150 grams.
6
Take each dough piece, stretch it, and roll it into a beautiful little ball.
7
Shape each dough ball into a bagel by making a hole in the center and rotating it around to widen it.
8
Prepare a pan with really hot water and add about 1/4 cup of baking soda.
9
Dip each bagel into the baking soda water for about 30 to 45 seconds.
10
Place the dipped bagels onto a cookie tray lined with parchment paper.
11
Brush the bagels with an egg wash.
12
Top six of the bagels with chopped jalapeños and shredded cheese.
13
Bake the bagels in the oven at 400 degrees Fahrenheit for 17 minutes.
14
Cut open a bagel to check for a nice chewy texture inside.

Tips
To prevent bagels from sticking to the parchment paper, ensure the oven is preheated to the correct temperature before placing them in.
For the baking soda water, you want the water to be cloudy; if not, add more baking soda.
