Chorizo, Pepper & Prawn Bake

Directions

  1. 1Preheat the oven to 220°C.
  2. 2Cut the peppers in half, remove seeds and cut into four pieces.
  3. 3Place the pepper slices on an oven rack and roast until slightly charred.
  4. 4Add a tablespoon of olive oil into the frying pan.
  5. 5Finely chop the chorizo and garlic.
  6. 6Add the chorizo and garlic to the hot olive oil and fry until crispy.
  7. 7Finely chop the parsley and add it to the chorizo and garlic mixture.
  8. 8Remove the chorizo, garlic and parsley from the frying pan, leaving the flavored olive oil behind.
  9. 9Add one mug of basmati rice to the flavored olive oil and mix well.
  10. 10Add two mugs of boiling water to the rice and stir.
  11. 11Arrange the roasted peppers over the rice in the pan and cover with a lid or tin foil. Bake in the oven for 15 minutes.
  12. 12In a bowl, combine the prawns, zest of half a lemon, juice of half a lemon and some of the chorizo, garlic and parsley mixture.
  13. 13After 15 minutes, remove the pan from the oven, arrange the prawns over the rice and peppers, and bake for a further 5 minutes.
  14. 14Serve hot, garnished with fresh parsley and a side of salad. Add a dollop of fresh yogurt as desired.

  • 50 grams chorizo
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 4 cloves garlic
  • 1 half bunch parsley
  • 1 mug basmati rice
  • 2 mugs boiling water
  • 1 tablespoon olive oil
  • 1 half lemon
  • 1 portion fresh yogurt
  • 1 portion salad
