Potato Dauphinoise

Directions

  1. 1Slice the potatoes and onions using a food processor.
  2. 2Place the sliced potatoes and onions in a tray.
  3. 3Add a pinch of salt and some pepper.
  4. 4Pour in three quarters of a pot of cream.
  5. 5Snip in some thyme.
  6. 6Place the tray on the hob and add boiling water, enough to come about a quarter of the way up the potatoes.
  7. 7Bring the mixture to a boil on full whack.
  8. 8Add two or three anchovies, breaking them up, and a bit of their oil.
  9. 9Add unpeeled, smashed garlic cloves.
  10. 10Grate in about a quarter of a nutmeg.
  11. 11Add a little bit of Parmesan.
  12. 12Cover the tray with tin foil and turn down the heat, letting it cook for about six minutes.
  13. 13Remove the tin foil and add an extra bit of Parmesan on top.
  14. 14Place the tray directly into the oven to gratinate until golden, bubbly, and delicious.

  • 0.75 pot cream

  • boiling water
  • 2 or 3 anchovies
  • anchovy oil
  • garlic
  • 0.25 nutmeg
  • Parmesan

Tips

  • Use a food processor to slice potatoes and onions quickly.
  • Cook potatoes on the hob first to speed up the cooking process before finishing in the oven.
  • Adding anchovies creates a salty, cheesy flavor that melts into the dish.
  • Do not peel the garlic; just smash and add it.
