Directions
- 1Start with about eight slices of bacon.
- 2Once the bacon is done, put it to the side.
- 3Add three tablespoons of butter and a medium onion.
- 4Let this have a good time in the pot.
- 5Add a big old dollop of garlic.
- 6Let that go until it's smelling good.
- 7Add flour and cook it long enough so it doesn't taste like flour when you're done.
- 8Add four cups of unsalted chicken broth, two cups of milk and just under a cup of heavy cream.
- 9Add salt, pepper and ancho chili powder.
- 10Add your potatoes in to cook.
- 11Let it come to a simmer. Stir it periodically so it doesn't stick.
- 12Cook until potatoes are fork tender.
- 13If you have an emulsion blender, this is the time to use it. If you don't, mash them up.
- 14Add a little milk to them so they weren't super thick.
- 15Put them back in. Add some sour cream.
- 16Add lots of shredded cheese.
- 17Add the bacon from earlier.
- 18Mix it all up, and put whatever toppings you want.
