Cheesy Beef Enchilada Casserole

Directions

  1. 1Preheat oven to 350°F and grease a 9x13 casserole dish.
  2. 2Brown the ground beef with onion in a skillet. Drain if needed.
  3. 3Stir in garlic, taco seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  4. 4Add enchilada sauce and Rotel if using. Simmer 2–3 minutes.
  5. 5Spread a thin layer of sauce mixture on the bottom of the baking dish.
  6. 6Add a layer of tortilla pieces, then spoon beef mixture on top, then a layer of cheese.
  7. 7Repeat layers (tortillas → beef → cheese) until everything is used.
  8. 8Finish with a thick layer of cheese on top.
  9. 9Bake 20–25 minutes, until hot, bubbly, and golden.
  10. 10Let cool slightly, then top with sour cream, cilantro, or green onions.

  • 1 packet taco seasoning

  • 0.5 teaspoon pepper
  • 1 can (19 oz or two 10 oz cans) red enchilada sauce
  • 1 can Rotel
  • 10 –12 corn or flour tortillas, cut into halves or quarters
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup mozzarella
  • sour cream
  • cilantro
  • jalapeños
  • green onions
