Preheat oven to 350°F and grease a 9x13 casserole dish.

Brown the ground beef with onion in a skillet. Drain if needed.

Stir in garlic, taco seasoning, garlic powder, onion powder, paprika, salt, and pepper.

Add enchilada sauce and Rotel if using. Simmer 2–3 minutes.

Spread a thin layer of sauce mixture on the bottom of the baking dish.

Add a layer of tortilla pieces, then spoon beef mixture on top, then a layer of cheese.

Repeat layers (tortillas → beef → cheese) until everything is used.

Finish with a thick layer of cheese on top.

Bake 20–25 minutes, until hot, bubbly, and golden.

Let cool slightly, then top with sour cream, cilantro, or green onions.

1 small onion, diced
3 garlic cloves, minced
1 packet taco seasoning
1 teaspoon garlic powder
1 teaspoon onion powder

1 can (19 oz or two 10 oz cans) red enchilada sauce
1 can Rotel
10 –12 corn or flour tortillas, cut into halves or quarters
2 cups shredded cheddar or Mexican blend cheese
1 cup mozzarella
sour cream
cilantro
jalapeños
green onions
