Directions

  1. 1Cook pasta in salted boiling water until al dente. Drain, reserving 1 cup pasta water.
  2. 2In a skillet, cook chopped onion and jalapeño until tender. Add ground beef and cook until no longer pink; then add taco seasoning.
  3. 3Drain fat from the skillet.
  4. 4Add canned tomatoes, 1/4 cup pasta water, and cheese to the skillet. Stir until cheese melts.
  5. 5Add cooked pasta and toss until combined. Garnish with cilantro and serve.
