Crockpot Taco Potato Soup

Directions

  1. 1Add a 2-lb bag of frozen cubed hash browns to your crockpot.
  2. 2Add a whole container of chicken broth to your crockpot.
  3. 3Add spicy nacho soup to the crockpot.
  4. 4Add a can of cheddar cheese soup to the crockpot.
  5. 5Cook 1 1/2 lbs of ground beef separately.
  6. 6Add an onion to the cooking ground beef.
  7. 7Drain some of the grease from the ground beef mixture.
  8. 8Add about a pack and a half of taco seasoning to the ground beef.
  9. 9Add the cooked ground beef mixture to the crockpot.
  10. 10Season the soup with garlic powder, Slap Ya Mama seasoning, and more taco seasoning.
  11. 11Cook on high for approximately 4 hours or on low for approximately 6 hours, or until the potatoes are tender.
  12. 12Add 1 cup of heavy cream.
  13. 13Add about 3/4 cups of sour cream.
  14. 14Add about 2 cups of shredded Colby Jack cheese.
  15. 15Stir everything together thoroughly.
  16. 16Cook for another 30 minutes or so until everything is combined and the cheese is melted.
  17. 17Top with sour cream and chives for serving.

Tips

  • You can use beef broth instead of chicken broth.
  • A can of diced tomatoes with green chilies would be a great addition.
