1Peel the onions and slice them thinly using a mandoline.
2Place onions in a large bowl, add finely chopped fresh thyme, salt, and black pepper. Mix with your hands.
3In a small pot, whisk together beef bouillon and heavy cream. Bring to a boil, then remove from heat and whisk in a large dollop of dijon mustard.
4After letting the onions sit for 10 minutes, use a paper towel to remove excess moisture.
5Assemble the casserole in a baking dish by creating layers of onion, gruyère cheese, onion, and then pouring the cream mixture over the top. Add another layer of gruyère cheese and dot with butter.
6Cover with aluminum foil and bake at 325 degrees for 45 minutes.
7Remove the foil and bake for another 30 minutes.
8Let the casserole sit for 5 minutes before serving.
