Make-Ahead Breakfast Burritos

Directions

  1. 1Heat olive oil in a skillet over medium-high heat. Add frozen Potatoes O’Brien and cook undisturbed for 5–7 minutes. Stir and cook for another 5 minutes. Reduce heat to medium-low.
  2. 2Whisk together eggs, salt, and pepper. Pour over potatoes and let sit for 1 minute, then stir gently. Repeat until eggs are slightly underdone.
  3. 3Remove skillet from heat and sprinkle cheese over egg and potato mixture. Let it melt.
  4. 4Heat tortillas between damp paper towels in the microwave for 20-30 seconds.
  5. 5Spread refried beans on each tortilla. Divide potato, egg, and cheese mixture over the beans.
  6. 6Fold the bottom edge over the filling, tuck in the sides, and roll tightly.
  7. 7Wrap each burrito in parchment paper and freeze.
  8. 8Microwave frozen burritos on high for about 5 minutes.
