Cheesy Chile Crisp White Beans
Directions
- 1Preheat the oven to 475 degrees.
- 2Heat the olive oil in a 10-inch ovenproof skillet over medium-high heat.
- 3Add the garlic and the white and light green scallion slices, reserving the dark greens for later.
- 4Cook until the garlic and scallions are lightly golden, for 1 to 3 minutes.
- 5Carefully stir in the tomato paste and chile crisp and cook for 1 minute.
- 6Stir in the beans and salt.
- 7Taste the mixture, adding more salt and chili crisp as needed.
- 8Evenly sprinkle the cheese over the top of the bean mixture.
- 9Bake for 6 to 10 minutes, or until the cheese has melted and browned in spots.
- 10Sprinkle with the reserved scallion greens and serve.

- 2 15-ounce cans white beans
- 0.5 teaspoon fine sea salt
- 8 ounces sharp white Cheddar, grated

Tips
- Add more salt and chili crisp as needed, but remember that the cheese will add saltiness, so don overdo the salt here.
- If you d like to toast the top further, run the skillet under the broiler for 1 to 2 minutes.
