Directions
1
Pat the steaks dry with a paper towel and season both sides generously with salt and pepper.
2
Heat a medium stainless steel pan over medium-high heat until water droplets dance on the surface of the pan (and no longer bubble).
3
Once heated, add the oil to evenly coat the surface of the pan and allow it to come to temperature.
4
Once shimmering, add steaks and sear for approximately 4 min on each side.
5
Lower the heat and add butter, smashed garlic cloves, and rosemary sprigs.
6
Carefully tilt your pan so that you can baste the steaks with the flavored butter.
7
After removing from the heat, let rest for minimum 10 min before serving.
8
Always slice against the grain for the most tender bite.
9
In the same pan over medium heat, add shallots & mushrooms.
10
Cook for 1-2 min.
11
Add butter, red wine and beef stock.
12
Stir to combine and let simmer for 10 min.
13
Then, add corn starch slurry, salt & lots of pepper and stir until thickened.
14
Serve overtop steak and enjoy!
