Garlic Butter Steaks with Mushroom Wine Sauce

Directions

  1. 1Pat the steaks dry with a paper towel and season both sides generously with salt and pepper.
  2. 2Heat a medium stainless steel pan over medium-high heat until water droplets dance on the surface of the pan (and no longer bubble).
  3. 3Once heated, add the oil to evenly coat the surface of the pan and allow it to come to temperature.
  4. 4Once shimmering, add steaks and sear for approximately 4 min on each side.
  5. 5Lower the heat and add butter, smashed garlic cloves, and rosemary sprigs.
  6. 6Carefully tilt your pan so that you can baste the steaks with the flavored butter.
  7. 7After removing from the heat, let rest for minimum 10 min before serving.
  8. 8Always slice against the grain for the most tender bite.
  9. 9In the same pan over medium heat, add shallots & mushrooms.
  10. 10Cook for 1-2 min.
  11. 11Add butter, red wine and beef stock.
  12. 12Stir to combine and let simmer for 10 min.
  13. 13Then, add corn starch slurry, salt & lots of pepper and stir until thickened.
  14. 14Serve overtop steak and enjoy!
