1In a bowl, mix 4 cups of bread flour, 2 and 1/4 teaspoons of yeast, 2 tablespoons of light brown sugar, and 1 and 1/2 teaspoons of salt. Whisk well to combine.
2Add 1/4 cup of oil and 1 and 1/2 cups of warm water to the bowl.
3Stir until it looks like the dough in the video.
4Turn the dough out onto a clean surface and knead until all the dry flour is incorporated. DO NOT add more liquid.
5Spray a bowl with oil, place the dough inside, cover with plastic wrap, and let it rise until doubled in size (about an hour).
6Preheat oven to 450°F.
7Turn the proofed dough out onto a clean surface. Do not punch it down.
8Use a pizza cutter to cut the dough into pieces and shape them into pretzels.
9In a shallow dish, mix water and 1/4 cup of baking soda until the water is cloudy. If needed, add more baking soda.
10Dip each pretzel into the baking soda mixture, then place them on a parchment-lined baking sheet.
11Brush the pretzels with an egg wash and sprinkle with pretzel sea salt.
