Heat the oven until hot.

Place the tomatillos and jalapeño on a baking sheet and roast until softened and lightly charred.

Transfer the roasted tomatillos and jalapeño to a blender.

Add the onion, cilantro, lime juice, and salt to the blender.

Blend until smooth, adding a little water if needed to loosen the salsa.

Taste and adjust with more salt or lime juice until the flavor is bright and balanced.

Let the salsa rest briefly so the flavors come together.

Stir before serving.

8 tomatillos, husked and rinsed
1 jalapeño pepper, stemmed and chopped
0.5 small onion, diced
0.5 fresh cilantro, chopped
1 lime, juiced
to taste Salt

Tips
Use 2 jalapeños for extra heat.
