1Start by adding a can of black beans, a drained can of sweetcorn, a can of Rotel tomatoes, a tablespoon of chili powder, a teaspoon of cumin, a teaspoon of onion powder, and one ranch packet to your crock pot.
2Give all the ingredients in the crock pot a good stir to really mix them up.
3Grab two large chicken breasts and nestle them into the mixture in the crock pot.
4Sprinkle about half a packet of taco seasoning (hot or regular) on top of the chicken.
5Cut a brick of cream cheese in half and place the halves in the crock pot.
6Throw the lid on the crock pot and cook on low for 6 to 8 hours or on high for 3-4 hours.
7Once the chicken is done and falling apart, remove it from the crock pot and place it in a bowl.
8Use a hand mixer or other tool to shred the chicken.
9Add the shredded chicken back to the crock pot.
10Mix everything in the crock pot very well, ensuring the cream cheese is fully incorporated.
11Add a dollop of sour cream and sprinkle some cheese on top.
12Serve in a bowl and enjoy.
