1Add the chicken thighs to a large bowl, drizzle with olive oil, and season with garlic powder, paprika, oregano, salt, black pepper, and optional chicken rub.
2Toss the chicken until well coated and let marinate for a few minutes.
3Cut the yellow baby potatoes in half.
4Place the seasoned chicken in the bottom of the crockpot and layer the potatoes over the chicken, seasoning them with extra chicken rub.
5Pour the chicken broth over the chicken and potatoes.
6Whisk the cornstarch into the warmed heavy cream until smooth and pour into the crockpot, stirring to combine.
7Layer the butter pats over the chicken.
8Cover and cook on HIGH for 3.5 hours or LOW for 5-6 hours until chicken is cooked and potatoes are fork-tender.
