Pulled hoisin chicken loaded salt & pepper chips

Directions

  1. 1Cut potatoes into chip shapes.
  2. 2Place the cut potatoes into the air fryer.
  3. 3Season the chips with salt, pepper, and 1/2 tsp Chinese five spice.
  4. 4Spray the chips with oil.
  5. 5Air fry the chips at 190°C for 15 minutes, shaking every 5 minutes, until golden and crispy.
  6. 6Marinate chicken breast with a heaped tsp of hoisin sauce.
  7. 7Fry the marinated chicken breast in a pan with oil spray for 7-8 minutes or until cooked.
  8. 8Shred the cooked chicken using two forks.
  9. 9Mix the shredded chicken with 1 tbsp hoisin sauce and fry in the same pan for a minute until sticky.
  10. 10Mix 1 tsp hoisin with 2 tbsp light mayo, a pinch of Chinese five spice, and enough cold water to loosen. Set aside in the fridge.
  11. 11Chop green, red, and yellow peppers and half a small onion.
  12. 12Spray a pan with oil and fry the onions and peppers for a few minutes to soften.
  13. 13Add the cooked chips to the pan with the vegetables.
  14. 14Add 1/2 tsp Chinese five spice, a pinch of sweetener, and 1 tsp soy sauce to the chips and vegetables, and mix well.
  15. 15Plate up the loaded chips.
  16. 16Add the hoisin pulled chicken on top of the chips.
  17. 17Drizzle the hoisin mayonnaise over the loaded chips.

  • 0.5 yellow pepper
  • 0.5 small onion
  • 1 tsp soy sauce
  • 1 pinch sweetener
  • 2 tbsp light mayo
  • oil spray
  • cold water

Tips

  • To loosen the hoisin mayonnaise, add enough cold water.
  • For crispy chips, shake them every 5 minutes during air frying.
  • For sticky chicken, fry with hoisin sauce for a minute.
